Are there any Java tutorials aimed at Xcode? Mac os X in general? (Meaning the building of applications with software that is standard or free.) Anybody Know any good tutorials???

Java's site at sun has everything you need/want and more. http://java.sun.com/docs/books/tutorial/index.html

It's really quite excellent. I know some Java and there are some people here who know quite a bit of it - ask away...
